These healthy cosmic brownies will bring you back to childhood while fitting in with your health goals. They are fudgy, decadent, and made with wholesome ingredients. Vegan, naturally-sweetened, and grain-free!

I’ve been wanting some comfort lately and what better way than to recreate a nostalgic childhood treat. These come together quickly and are super easy to make.

Main Ingredients:

Cacao: Rich in antioxidants cacao gives these brownies their richness and fudgy goodness. You can substitute cocoa powder but it may not taste as richly chocolatey.

Almond Butter (Or other nut butter or allergy-friendly alternative): Nut butter is used in place of oil in these brownies. If you have a nut allergy try sunbutter!

Flax-eggs: These bind these brownies together and provide moisture in place of eggs.

Coconut Sugar: An unrefined and low GI sweetener from the nectar of a coconut.

Maple Syrup: Full of nutrients and antioxidants!

Coconut Flour: Just a little bit of coconut flour goes a long way. It’s very absorbent of liquids. It’s packed with protein and fiber.

How to Make Healthy Cosmic Brownies

The brownies themselves only require one bowl and come together in about 10 minutes!

First you’ll combine almond butter, coconut sugar, maple syrup, vanilla, and flax-eggs in a large bowl until well combined.

Then add in your dry ingredients, cacao, coconut flour, baking soda, and salt and stir until well incorporated. The batter will be very thick – totally fine!

Spread the batter into a parchment paper lined baking dish (I used an 8×8”), you may need to use your hands or a rubber spatula for best results. Bake at 350 F for 22-28 minutes (I took mine out at 24 minutes).

Chocolate ganache made from coconut oil, coconut milk, maple syrup, and cacao.

While your brownies are baking, make your chocolate ganache frosting. Simply combine melted coconut oil, canned coconut milk, maple syrup, and cacao powder in a glass container.

Depending on the temperature of your coconut oil it may be fine as is or you can microwave it for 30 seconds to get it melty (alternatively you can leave it for a thicker, cake-like frosting rather than ganache).

Cool brownies fully before pouring on ganache. Then let cool further before putting on your sprinkles (if desired).

Healthy Cosmic Brownies

Ingredients

  • 1 cup almond butter (creamy + salted)
  • 2/3 cup coconut sugar
  • 1/4 cup pure maple syrup
  • 2 flax "eggs" (2 tablespoons ground flax seeds + 5 tbsp water*)
  • 1 teaspoon pure vanilla extract
  • 1/3 cup cacao
  • 1 tablespoon coconut flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda

Chocolate Ganache

  • 1/2 cup coconut oil (melted)
  • 1/3 cup canned coocnut milk
  • 1/2 cup maple syrup
  • 1/2 + 1/3 cups cacao powder
  • *1-2 tablespoons almond milk (if needed)

Instructions

  • Preheat oven to 350F.
  • In a large bowl combine almond butter, coconut sugar, maple syrup, vanilla, and flax “eggs”
  • Add in cacao, coconut flour, baking soda, and salt and stir until fully incorporated (texture will be very thick)
  • Spread batter into parchment paper lined baking dish (or lightly greased). Bake for 22-28 mins (took mine out at 24). 
  • Meanwhile make your chocolate ganache frosting. Combine all ingredients in a microwavable container. You can leave as is (will be thick like cake frosting) or microwave for 30 seconds to 1 minute for a thinner silky smooth chocolate ganache to pour over the brownies (stir in 1-2 tablespoons of almond milk after heating to fix any separation or thickness). 
  • Spread frosting over brownies and cool slightly before adding sprinkles (if desired). Enjoy!

Notes

To make flax “eggs” combine 2 tablespoons of ground flax seeds with 5 tablespoons of water. Stir and let sit for 10-15 minutes, stirring occasionally.
